I commonly hear people say that if you share anything with a married friend, you should expect the wife to also know since married people dont keep secrets from each other. This seems crazy to me. If I tell you something deeply confidential and ask you not to share it with anyone, I would expect that requested to be respected absolutely. Is this unreasonable?

It's not unreasonable, but also not realistic.

No, of course it's not unreasonable. However, if you are sharing something personal and want it to just be kept between you and your friend, make sure that you tell them not to share it. That way there is no ambiguity as to whether or not the information should be shared.

I've had this discussion with my spouse. They 100% agree that, as long as it's nothing to do with them, I should respect other's requests to keep a secret. If it's something I might want to talk to my spouse about, I get permission first.

I don't think it's unreasonable at all but I've seen this conversation play out online before. There's a significant proportion of people who think that there should never be any secrets within a marriage, even if it's another person's private information.
As the perpetually single friend it was slightly jarring to realise this

I tell my wife everything that involves her and any information that she would feel betrayed if she knew I had kept it from her. If something doesn’t need to be brought up, you can just not bring it up. My wife doesn’t need to know everything if her life is absolutely the same whether she knows the thing or doesnt. For example, if my friend called me and said he accidentally shoved a cucumber up his ass and it won’t come out, and that he needed a pair of icetongs, and a friend that can keep a secret, I would grab my icetongs and head over to help my friend. I can just say to my wife that we need a new set of icetongs because my buddy needed them and they got broken. Now, my wife would need to know the full story if I brought the ice tongs back, you understand?

I would say most partners might give a vague summary when talking to their spouse (even pertaining to their friends or parents) about what is going on.
But they're not going to relay a play-by-play.
Friend message: My brother took a fall two days ago and landed in the hospital, he's going to admitted for critical injury. I'm going to stay at the hospital overnight for the next couple of days because someone needs to be here once he wakes up and figure out where to go from here. This is so stressful and I've been unable to sleep since.
What it looks like, to SO: "Friend messaged me. Turns out a family member had an incident (accident, took a fall, whatever), they're in the hospital. Friend is stressing out and probably won't be able to hang out this week."
So yes usually we might pass on super surface level details and keep things confidential, but yes, best to assume we do keep our partners in the know about our loved ones.
YMMV.
Edit: Whenever I tell something to one of my parents, I assume the other parent will hear shortly of it. If I tell mom that I'm planning to visit in a couple of weeks for a 3-4 day stay and that we can go bowling and book tickets to the theatres, she doesn't necessarily tell her spouse (my dad) [all those minutiae] *right away*, but she's likely to holler over at him within the day (or just minutes/ an hour or so later) that "Nightingale is planning to come visit in a couple of weeks, book the calendar" and then when I arrive, we'll go into details later.
Another example: I also assume that when I tell my best friend something, odds are, she'll relay a barebones TLDR to her husband (usually because it involves him by proxy such as coming over to hang out).

I think it depends on the type of secret, some things should absolutely stay private

I mean that's probably something you should discuss with your friend before sharing the secret instead of getting mad about a hypothetical situation
But also ya married people talk to eachother
